Wine Selection and Mixing
You learn about the available wines, their attributes, costs, and time to maturation. You make a selection and the concentrate is mixed with yeast nutrient and ultra-low chlorine water in the primary fermentor.

| Glass Carboys |
|

First Rack
After 9-14 days (9 for red wines and 14 for whites) the wine is siphoned from the fermentor and placed in a glass "carboy" for further fermenting. This is called "racking" and the process leaves the "lees" or precipitates behind in the fermentor. The carboy is then tagged with your name, the wine type, and status of the wine.
Second Rack or Stabilizing Rack
On day 21, the fermentation is stopped using the stabilizing and fining agents that come with the kits.
Rack to Clear and Filtering
On day 28, the wine is racked into a clean glass carboy, again leaving the lees behind. The wine is left for an additional 7 days for any further sediment to fall out, and on day 35 all wines are filtered.

| Filling Process |

Bottling and Corking
At day 45, you are notified that your wine is ready for bottling and you make an appointment to bottle your wine. Assistance is available from our wine consultants if required. You can supply your own bottles or you can purchase them from us. Corks are provided, but labels and decorative foils are optional items.
